Easy Lemon Turmeric Rice

Easy, refreshing and crunchy lemon turmeric rice. A great side dish for seafood.

Ingredients
  

  • 2 cups Basmati rice, uncooked
  • 4 cups water
  • 2 teaspoons salt
  • 6 tbsp vegetable or canola oil
  • 1 teaspoon turmeric powder/ground turmeric
  • 1/2 cup roasted peanuts, chopped unsalted or lightly salted
  • 1/4 cup lemon juice
  • lemon pepper optional, to taste

Method
 

  1. Bring water to a boil in a large sauce pan.  Add rice and salt, and reduce heat to low. Cover and simmer for 20 minutes or until water has been absorbed.
  2. In a separate small saucepan, heat oil over medium-low heat.  Add turmeric and peanuts and cook for 1-2 minutes until peanuts are lightly browned. Remove from heat, add lemon juice and stir.  
  3. Pour oil mixture over cooked rice and gently mix until the rice is evenly coated with turmeric oil.  Add lemon pepper to taste.
