Method
- Bring water to a boil in a large sauce pan. Add rice and salt, and reduce heat to low. Cover and simmer for 20 minutes or until water has been absorbed.
- In a separate small saucepan, heat oil over medium-low heat. Add turmeric and peanuts and cook for 1-2 minutes until peanuts are lightly browned. Remove from heat, add lemon juice and stir.
- Pour oil mixture over cooked rice and gently mix until the rice is evenly coated with turmeric oil. Add lemon pepper to taste.
