Easy Lemon Turmeric Rice

Easy, refreshing and crunchy lemon turmeric rice. A great side dish for seafood.

Ingredients
  

  • 2 cups Basmati rice, uncooked
  • 4 cups water
  • 2 teaspoons salt
  • 6 tbsp vegetable or canola oil
  • 1 teaspoon turmeric powder/ground turmeric
  • 1/2 cup roasted peanuts, chopped unsalted or lightly salted
  • 1/4 cup lemon juice
  • lemon pepper optional, to taste

Instructions
 

  • Bring water to a boil in a large sauce pan.  Add rice and salt, and reduce heat to low. Cover and simmer for 20 minutes or until water has been absorbed.
  • In a separate small saucepan, heat oil over medium-low heat.  Add turmeric and peanuts and cook for 1-2 minutes until peanuts are lightly browned. Remove from heat, add lemon juice and stir.  
  • Pour oil mixture over cooked rice and gently mix until the rice is evenly coated with turmeric oil.  Add lemon pepper to taste.
