1/2cuproasted peanuts, choppedunsalted or lightly salted
1/4cuplemon juice
lemon pepperoptional, to taste
Instructions
Bring water to a boil in a large sauce pan. Add rice and salt, and reduce heat to low. Cover and simmer for 20 minutes or until water has been absorbed.
In a separate small saucepan, heat oil over medium-low heat. Add turmeric and peanuts and cook for 1-2 minutes until peanuts are lightly browned. Remove from heat, add lemon juice and stir.
Pour oil mixture over cooked rice and gently mix until the rice is evenly coated with turmeric oil. Add lemon pepper to taste.
